The Maillard reaction occurs every time you cook something. See if you can recall times when you have seen the same foods cooked in the same way but the food came out completely different.

Look to the images on the left, both mushrooms were cooked using olive oil on a medium high heat, for the same amount of time, yet they turned out completely different. Explain why this happened with regards to the Maillard reaction.
